In barely a month, it's Christmas! The children have surely already made their lists for Santa Claus and you must certainly be wondering what you will be able to cook while waiting for the bearded gentleman to arrive in his red suit.

Our chef Stéphanie has cooked us a special Christmas aperitif that will delight your taste buds and which is also quite economical (about fifty euros for 8 people).

Colored wraps

We will start by making wraps but we will not present them in a very simple way on a plate. We will arrange them so as to make a tree shape to stay in the Christmas theme. And a little trick, we're going to color the wraps green with chlorella to remind us of the green coat of the fir tree.

Ingredients for the recipe:

  • 5 patties
  • 2 lawyers
  • 2 carrots
  • 120 grams of fresh cheese (like Madame Loïc)
  • 200 grams of black beans
  • 50 grams of young shoots (here Alfafa)
  • 1 large shallot
  • ½ lemon
  • This

  • 1 teaspoon of Chlorella (optional)

  • Preparation: 30 mins

Steps :

  • In a bowl, mix the chlorella with a little water and color one side of the pancakes (no obligation, it's to give a green color to the pancakes for mounting the tree).
  • Rinse and drain the black beans.
  • Peel, wash and grate the carrots.
  • In a food processor, chop the shallot, add the avocado and the cheese spread, the lemon juice and salt and pepper.
  • Put the avocado preparation on the patties then the carrots, black beans and young shoots.
  • Roll the wraps in cling film and refrigerate for 1 hour.
  • After the pause time, cut sections of about 3 cm and place in a dish to form a Christmas tree.

Quinoa verrines

We couldn't make a Christmas menu without making the famous verrine, star of dinner aperitifs. We offer you here a vegetarian verrine full of colors and flavors.

Ingredients for the recipe:

  • ½ glass of dry quinoa
  • 1 cup corn
  • 1 cup red kidney beans
  • A few sun-dried tomatoes
  • ½ shallot
  • 2 tablespoons cilantro
  • Pepper

  • Cutting board

Time :

  • Preparation: 15 mins
  • Rest: 10 mins
  • Cooking: 15 mins

Steps :

  • Cook quinoa as directed on package, then refrigerate.
  • Rinse and drain the beans and corn and put in a salad bowl.
  • Finely dice the sun-dried tomatoes.
  • Chop the cilantro.
  • When the quinoa is cooled, put it in the salad bowl with the rest of the ingredients, then mix.
  • Distribute in the verrines.

Sardine rillettes

Ingredients for the recipe:

  • 2 cans of sardines in oil
  • 100 grams of fresh cheese (like Madame Loïc)
  • 2 shallots
  • 1/2 lemon
  • 10 sprigs of chives
  • Salt pepper

Material :

  • Robot
  • Juicer
  • spatula
  • Scissors

Time :

  • Preparation: 10 mins

Steps :

  • With the food processor, chop the shallots.
  • Drain the sardines, remove the central bone and scrape the sides to remove as many scales as possible.
  • Add the sardines to the food processor with the cream cheese, lemon juice, salt and pepper.
  • Mix for a few seconds, then add the chopped chives, and mix again.
  • Reserve in the refrigerator.

We will serve the sardine rillettes with pieces of carrots and endive leaves, but you can very well serve them on small pieces of bread.

Endives Ricotta, apples and walnuts

Ingredients for the recipe:

  • 2 chicory
  • 150 grams of ricotta
  • 1 apple (Granny style)
  • A few nuts
  • Salt and pepper

Steps :

  • Wash the endives and the apple and set aside.
  • In a bowl, mix the ricotta with the salt and pepper.
  • Select the prettiest endive leaves (with the rest, you can make an excellent salad).
  • Cut small dice of apple.
  • Put the ricotta on the leaves and sprinkle with apple pieces and walnuts.
  • Reserve in the refrigerator.

Spoons of cheese and seed mix

Steps :

  • Mix the cheese with the salt and pepper in a bowl (not too long so as not to heat the cheese, otherwise chill it a little).
  • Make dumplings using spoons.

  • Roll the small dumplings in the Krush Salad Mix!
  • Arrange in spoons.
  • Refrigerate.

Parmesan cookies

Ingredients for the recipe:

  • 80 grams of flour
  • 100 grams of grated parmesan
  • 80 grams of butter
  • Salt and pepper

Steps :

  • In a bowl, mix the flour with the soft butter and the parmesan, salt and pepper.
  • Form a ball and refrigerate for 10 minutes.
  • Preheat the oven to 190°C.
  • Take the ball out of the fridge and roll out with a glass bottle or rolling pin. Use cookie cutters to shape cookies.
  • Place in the oven for about 10 minutes until the biscuit browns.
  • Remove the cookies from the oven and let them cool to crisp.

Sweet and savory club sandwiches

Ingredients for the recipe:

  • 8 slices of wholemeal bread
  • 1 Conference pear
  • 20 grams of butter (for cooking and for spreading)
  • 2 tablespoons balsamic vinegar
  • 4 slices of Bayonne ham
  • 1 teaspoon of honey

Steps :

  • Peel the pear and dice it.
  • Fry the pear pieces in the butter, salt and pepper.
  • After 5 minutes, add the honey, mix, leave to brown for 2 minutes.
  • Deglaze with the balsamic vinegar and continue cooking to obtain a compote. To book.
  • Lightly butter the bread.
  • Cut the cheese with a mandolin.
  • Spread the compote on the bread, add the cheese and the Bayonne ham. Close the sandwich then cut into 4.
  • Put in the fridge.
