What if we reduced our consumption of meat Cindy? Preparing vegetarian meals is part of the My Little Planet challenges , so we tried our homemade vegetarian patties (and we loved it). Meat production is very energy-intensive and therefore has an impact on the increase in greenhouse gases (you can read our article on eco-gestures concerning food ). That's why it's important to have vegetarian meals a few days a week. Also, if you have children who have trouble eating vegetables, this can be a great way to get them to eat them.

Soy flakes, eggs and legumes will provide the proteins necessary for vegetable patties. Each patty will provide about the same amount of protein as a beef patty.

Ingredients for the recipe:

  • 100 grams of red beans
  • 100 grams of chickpeas
  • 40 grams of red onion
  • 50 grams of green pepper
  • 50 grams of carrot
  • 70 grams of  soy flakes
  • 70 grams of breadcrumbs
  • 2 eggs
  • 2 cloves garlic
  • Salt pepper
  • Spices

For the spices, use whatever you like. In our recipe, we chose to add coriander and turmeric. You can, of course, vary the vegetables as you wish.

Steps :

  • Mix the chickpeas and red beans.
  • Finely chop the carrots, green pepper, garlic and onions and sauté them in a pan with a little oil until tender.
  • Once cooked, allow to cool slightly.
  • In a salad bowl, combine all the ingredients.
  • Form balls and flatten them a little to form patties.
  • Cook in a pan with a little oil.
  • To be enjoyed hot.
  • Enjoy your food !

We made 6 vegetable pancakes of about 100 grams each and we accompanied them with a small green salad.
