We continue this week with a simple and original recipe : the vegetable pancake. Easy and quick recipe, this is the ideal healthy recipe to vary your diet in terms of vegetables. It's even an excellent anti-waste recipe if you have a few vegetables left that are starting to spoil.

This savory pancake is also ideal for children who have difficulty eating vegetables. You can also mix the vegetables completely before mixing them in the preparation for the most difficult!

In order to make the meal even more colorful, we used turmeric as a natural coloring agent, you can completely replace it with spirulina, chlorella or any other natural coloring agent. But in addition to the color, it is also and above all the opportunity to enjoy the benefits of this spice, considered today as a: superfood. Used for centuries in Asia, turmeric is an excellent anti-inflammatory , will promote digestion , moreover, it is particularly rich in antioxidants .

As for the recipe, it's very simple. We will start with a recipe for savory pancake batter and add freshly grated vegetables, turmeric, cheese and fry everything. No need for your most beautiful apron this week, we're going with a super quick recipe! (be careful not to get dirty though ;) )

Ingredients for the recipe:

  • 150 grams of flour
  • 3 eggs
  • 15 cl of milk
  • 1 large carrot
  • 1 large zucchini
  • 1 onion
  • 50 grams of grated cheese
  • 1 to 2 tablespoons of  Turmeric Biosavor
  • Salt and pepper

Steps :

  • Grate the carrot and zucchini.
  • Drain the zucchini well so that it does not make too much water.
  • Brown the chopped onion in a pan with a little olive oil. Add the grated carrots to cook them a little.
  • In a bowl, mix the eggs and milk until the mixture is homogeneous and pour over the flour.
  • Add the rest of the ingredients to the preparation (carrot, onion, zucchini, grated cheese).
  • Add 1 to 2 tablespoons of Turmeric  (depending on your taste).
  • Salt and pepper.
  • In a hot, lightly oiled skillet, cook like pancakes, but making them smaller.
  • To be enjoyed hot. 

You can very well replace the turmeric with another superfood like chlorella or spirulina.
