Have you ever heard of Cindy's Fluffy pancakes? Straight from Japan, these pancakes, inspired by traditional American pancakes, are thicker and softer than the latter (by the way "fluffy" means soft in English).

But what is it exactly? It's quite simply a pancake batter in which you add whipped egg whites, which will give them this airy side. And to give them this round shape and keep their height, we are going to cook them in pastry circles.

Stars for breakfasts and brunches, these fluffy pancakes can be garnished with fresh fruit, chocolate, maple syrup or even caramel. It's up to you to garnish them as you wish.

A thick and fluffy pancake

Ingredients for the recipe:

  • 3 eggs
  • 100 grams of sugar
  • 150 grams of flour
  • 1 packet of baking powder
  • 1 glass of milk
  • 2 teaspoons liquid vanilla
  • Melted butter
  • 1 pinch of salt

For the topping of your pancakes you can use what you want: melted chocolate, maple syrup, caramel... (We even tested a fluffy pancake by inserting a square of milk chocolate in the middle of the dough, and it's Super good !)

Steps :

  • Crack the eggs and separate the whites from the yolks. 
  • Add the sugar to the egg yolks and mix.
  • Add the milk and liquid vanilla and mix again.
  • Add the flour little by little to your preparation then add the baking powder. The mixture should be thick and homogeneous.
  • Whip the egg whites, then incorporate them into the previous mixture using a spatula in 3 or 4 times. Mix gently so as not to break the texture of the egg whites. The pancake batter should be fluffy.
  • Brush the pastry circle with melted butter and place it in a lightly buttered pan (if you have several circles, you can make several at the same time).
  • Pour pancake batter up to 3/4 of the circle (the batter will swell as it cooks).
  • Let the first side cook for 5 minutes, then turn the pancake with the circle and let the other side cook for 2 to 3 minutes.
  • Using a knife, peel the pancake from the circle, then remove it. 
  • Place the fluffy pancakes on a plate and add the topping of your choice. 
  • Enjoy your food.

If you don't have a pastry ring to make your fluffy pancakes, you can bake them like classic pancakes, they will just be lower.
