Turmeric is a spice with multiple benefits: it is an excellent anti-inflammatory, it contributes to the well-being of muscles and joints and also improves digestion. To accompany your velouté (and to change simple plain or garlic croutons), we have decided to offer you a recipe for parmesan biscuits that is ultra simple and quick to make.

Ingredients for the soup:

  • 700 grams of carrots
  • 40 grams of butter
  • 2 teaspoons of Turmeric Biosavor
  • 1 tablespoon heavy cream per bowl

Ingredients for the Parmesan Cookies:

  • 60 grams of parmesan
  • 50 grams of butter
  • 50 grams of flour

Steps for the velouté:

  • Peel the carrots and cut them into slices.
  • In the heated blender, put the carrots, about 600ml of water, 2 teaspoons of Turmeric Biosavor , the butter, a few coriander leaves, salt, pepper and nutmeg.
  • Bake 30 minutes.
  • Serve the velouté with the fresh cream and a few crushed hazelnuts (optional) on top.

You can also decline this recipe by putting coconut milk instead of fresh cream, it goes very well with carrots. And if you don't like turmeric, you can very well replace it with cumin or a little cayenne pepper.

Steps for cookies:

  • In a bowl, mix the soft butter with the flour and the parmesan.
  • Form a ball and refrigerate for 10 minutes.
  • Preheat the oven to 190°C.
  • Take the ball out of the fridge and form small balls with your hands. Use a glass to give the shape of a tile.
  • Place in the oven for about 5 minutes until browned (the tiles harden as they cool).
  • Take the tuiles out of the oven and let them cool until crispy.
