Cake Pops, or Pop Cakes, are small balls of cake coated in chocolate and planted on a lollipop stick. Moreover, the word "Cake Pop" means "lollipop cake", it is the contraction of cake and lollipop . The Pop Cake is made from a cake base (muffin, pound cake, brownie) that is mixed with a binder (mascarpone, spread, cream cheese, etc.). This mixture is then rolled into small balls that are covered with melted chocolate and then decorated with colored vermicelli, crushed almonds or sugar pearls. The Pop Cake recipe is very popular thanks to its playful, colorful and infinitely customizable aspect. Cake Pops will be particularly appreciated during baptisms, birthday parties or baby showers.

The cake pop can also be savory for an aperitif (with tuna, pizza style, etc.).

A little history

The "Cake Pop" recipe is quite recent, since it dates from the 2000s. It is the American Angie Dudley , better known as "Bakerella", who will share for the first time her technique for making cupcakes in the shape of balls and planted on a lollipop stick. Quickly, these little treats become very popular thanks to their too cute appearance and their delicious taste.

Originally, "Cake Balls" were cakes made from leftover cakes to avoid waste. They are then mixed with icing and shaped into small balls then covered in melted chocolate. Unlike Cake Pops, Cake Balls are not mounted on a stick.

Ingredients for the recipe:

  • 300 grams of cake
  • 200 grams of mascarpone
  • 150 grams of dark pastry chocolate
  • 150 grams of white pastry chocolate
  • A little coconut oil
  • Honey Sesame Almonds

For this Pop Cake recipe, we made a classic cake. We put the link to the recipe here. You can also use leftover four quarters, for example, or biscuits such as small butter.

Steps :

  • Mix the cake and add the mascarpone.
  • Mix well until obtaining a homogeneous preparation.
  • Form small balls with your hands and put them in the freezer for a few minutes.
  • Meanwhile, melt the two kinds of chocolate in a bain-marie, adding a little coconut oil to make it more fluid and creamy.
  • Once the balls have hardened, plant the stick all the way to the center and cover them in the melted chocolate (you can dip your stick in the chocolate before planting it in your cake ball, this will allow it to stick well) .
  • Decorate the balls with honey and crushed sesame almonds or mix the two chocolates.
  • Place in the fridge to set the chocolate.
  • Enjoy these delicious Cake Pops.
  • Store the balls in the fridge.
